Ingredients:

To make Sorakaya Pulusu at home, you’ll need the following ingredients:

  • 2 medium-sized cucumbers
  • 1 cup sugar
  • 1/2 cup water
  • 1 tsp cardamom powder
  • 1 tsp cloves powder
  • 1/2 tsp nutmeg powder
  • A pinch of salt
  • 2 tbsp ghee (clarified butter)

    Ingredients

  • 1/4 cup chopped nuts (optional)
  • 1/4 cup raisins (optional)

Instructions:

  1. Start by washing and peeling the cucumbers. Cut them into thin slices, about 1/8 inch thick.
  2. In a large saucepan, combine sugar, water, cardamom powder, cloves powder, nutmeg powder, and a pinch of salt. Bring the mixture to a boil over medium-high heat.
  3. Once the sugar syrup has reached a rolling boil, add the cucumber slices to the saucepan. Stir well to ensure that the cucumbers are evenly coated with the syrup.
  4. Reduce the heat to low and cover the saucepan with a lid. Let the cucumbers simmer for 20-25 minutes or until they turn translucent and chewy. Stir occasionally to prevent sticking.
  5. After the cucumbers have cooked, remove the saucepan from the heat and add ghee. Stir well to coat the cucumbers with the ghee.
  6. If desired, you can garnish the Sorakaya Pulusu with chopped nuts or raisins.
